Macro friendly chili
Chili is the perfect food to warm you up in the fall. What’s more is that lean ground beef is full of nutrients and protein. This is an easy dish served over cauliflower rice. It is great for meal prep providing 4 good sized portions.
Ingredients
1 pound of 97% fat free ground beef
1 can black beans
1 can of diced tomatoes
1/2 large onion
4 jalapeños
4 garlic gloves
Cumin
Olive Oil
Juice of 3 Limes
3 tbsp. low fat sour cream or yoghurt
Himalayan Salt
Black Pepper
Chipotle Dash Seasoning
1 tbsp. Worcestershire Sauce
2 cups chicken stock
1/12 cups of white rice
1 bag of riced cauliflower
Method
Finely chop garlic, onion and jalapeños. Heat up large deep fry pan or saucepan. Add olive oil. Heat and add cumin. Cook cumin till fragrant (should smell). Be careful not to burn it. Add chopped garlic, onion and jalapeños. Cook until onion is translucent.
Add in ground beef. Cook until brown. Add in canned beans and tomatoes. Add stock. Add Worcestershire sauce. Season with chipotle dash, salt and pepper to taste.
Simmer for 20 minutes.
Combine rice, riced cauliflower and 3 cups of water. Add some salt to taste. Cook until boiling then switch off burner / heat. Let sit for 20 minutes.
Combine sour cream, lime juice, salt and pepper.
Serve chili over cauliflower rice with sour cream crema on top. Enjoy!
