Tacos

Macro friendly, low calorie, steak tacos

This is an easy, quick meal that’s low in calories and fat. It’s also easy on the budget. I usually use tri tip steak as it’s cheap and usually fairly tender. You’re looking at about 240 grams of steak for two servings. This is one of my chef wife’s favorite recipes I make and it’s so healthy.

Ingredients

Grilled topping

1/2 large onion or 1 small diced

2 cloves garlic finely chopped 

2 jalapeños diced

1/2 tsp Dried cumin – make sure this becomes fragrant in the pan in your oil when you cook it before dropping other veg in 

Salt and pepper

Spray oil

Tomato salsa 

Handful fresh cilantro chopped

1 tomato diced

Salt and pepper

Lime crema 

2 tbsp light sour cream

Juice from 2 limes

Salt 

Steak

Mrs.Dash chipotle or extra spicy rub

240 grams of steak of choice 

Spray oil

Four low carb tortillas 

Baby spinach 

Hot sauce of your choice – I like chipotle Tabasco 

Method

Spray down a pan with oil and throw in your cumin. You want to get the cumin aromatic before you throw the garlic, onions and pepper in. Fry this up till it’s a little browned. Season with salt and pepper.

Get your steak and coat with Chipotle Mrs.Dash seasoning. Put your fry pan or skillet on medium-high heat. Blacken your steak and cook to preference. I usually do medium-rare at an inside temp of between 220 and 230 Fahrenheit. A meat temperature is incredibly helpful for this. Let the steak rest for half the cook time then slice thinly.

Combine your lime juice, sour cream and some salt to taste.

Dice your tomatoes and cilantro and combine with salt and pepper to taste.

Spread your lime crema on your tortillas. Add your steak, grilled toppings, tomato salsa and baby spinach. Add hot sauce if desired. Enjoy!
