Oatmeal

Oatmeal with egg

I have never been a big fan of oatmeal. My Mum used to try to feed me semolina as a kid with butter, brown sugar and cinnamon on top. I would eat all the good stuff off the top and then just be left with a bland heap of semolina. It ended up making me feel nauseous. Still now thinking about it, I am stifling a gag.

Oatmeal has always been a challenge for me until I found out that if you add an egg it completely changes the consistency. So here is a quick, easy, macro balanced breakfast that is a great start to your day.

Serves 2

Ingredients

1 cup oatmeal

1 3/4 cup water

2 eggs

4 tablespoons of peanut butter powder

1 teaspoon of cinnamon

Extra oat milk for serving

Calorie free sweetener

Method

Combine all ingredients using a fork or whisk in a saucepan. Heat the ingredients in the saucepan at a medium heat and stir occasionally to make sure it doesn’t stick to the bottom. Once the oatmeal gets hot and reaches a soft consistency, remove from the heat. Place cooked oatmeal in a bowl and finish with your choice of calorie free sweetener plus extra oat milk.
