Macro friendly Spaghetti Bolognaise
The great thing about eating with macros in mind is that you can easily adapt your old recipes and still get that comforting feeling you would usually get when you eat these meals. A comfort food for me is spaghetti bolognaise. It’s also friendly on the budget.
This is a really easy recipe and should leave you feeling satisfied. One of the main reasons that I haven’t been able to stick to previous strict diets is because they are too strict and left me feeling hungry after a meal. This recipe should fill you up and keep you full until your next meal.
Makes 3 servings.
Ingredients
1 LB 97% fat free ground beef
1 small onion diced
4 cloves of garlic minced
1 zucchini diced
1/2 small eggplant diced
1 carrot diced
1/4 green pepper diced
2 stalks celery diced
1 can diced tomatoes
3-4 bay leaves
1 tsp dried oregano
1 tsp dried basil
1/2 cup chicken stock
1/4 cup red wine
Salt and pepper to taste
Low calorie cheese sprinkles
Low calorie butter sprinkles
150 grams of whole grain pasta uncooked
Spray olive oil
Method
Heat your pan on medium and spray with olive oil. Throw in onions and garlic and sauté till transparent. Add ground beef and cook until no longer pink. Add in remaining vegetables, canned tomatoes, wine, stock, herbs, salt and pepper to taste. Turn heat to low and put a lid on it.
Get a saucepan and fill with water. Add salt to desired taste. Once water is boiling add pasta. Cook pasta till tender and drain. Add butter sprinkles, salt and pepper to taste.
Place pasta on serving dish. Top with meat and vegetable sauce. Finish with cheese sprinkles.
